Instructions

  1. Trim the leaves and stems off of the beets, leaving about 1 inch of stem attached. Wash them thoroughly.
  2. Place the cleaned beets in a large pot of cold water, covering them completely. Add a pinch of salt to the water. Bring to a boil, then reduce heat and simmer until beets are tender but still firm when pierced with a fork (approx. 30-60 minutes, depending on size). Add water as needed during boiling.
