  • 1 pinch of dried red pepper flakes (about 10 flakes total, use more if you like more heat in your recipes)
  • ⅓ cup freshly grated Pecorino Romano cheese
  • Fresh basil leaves

  1. Prepare the Corn: Begin by carefully removing the husks and silk from your fresh corn on the cob. Ensure all silk strands are removed for the best texture.
  2. Boil the Corn: Fill a large pot with water and bring it to a rolling boil. Once the water is boiling rapidly, carefully add the husked corn on the cob and cook for about 10 minutes. This ensures the corn is tender and sweet. NOTE: If you prefer a different cooking method (grilling, roasting, microwaving, or Instant Pot), prepare your fresh corn according to your usual preference before proceeding to the next steps.
  3. Cool the Corn: After cooking, remove the corn from the hot water and allow it to cool off slightly. This step is crucial so you can safely handle the cobs without burning your hands when removing the kernels.
  4. Remove Kernels: Once the corn has cooled enough to handle, use a sharp serrated knife to carefully slice the kernels off the cob. Hold the cob upright on a cutting board and slice downwards, ensuring you get as much of the kernel as possible.
