As an educator, witnessing these milestones holds a particularly special place in my heart, a testament to perseverance and dreams realized.
Later in the month, Memorial Day calls for solemn reflection, as we honor the memory of those who have passed away and pay tribute to the brave individuals who have served and continue to serve in our military, protecting the freedoms we hold dear. Beyond these significant dates, May is dotted with numerous other occasions, big and small, that bring families and friends together for shared moments of joy, laughter, and, of course, wonderful food.
Among these cherished celebrations, one stands out for its vibrant culture, lively music, and irresistible flavors: the festive Cinco de Mayo! This day is a fantastic excuse to dive headfirst into the rich culinary traditions of Mexico, a cuisine beloved by so many around the globe.

We are incredibly lucky to have an exceptional, locally-owned Mexican restaurant right here in our small town. “La Hacienda,” affectionately known as “La Ha” by the regulars, is truly a five-star establishment in every sense – from the quality of the ingredients to the authentic flavors and the welcoming atmosphere.
It’s the kind of place where the staff greets you by name the moment you walk through the door, and before you’ve even settled into your seats, a bowl of their legendary homemade salsa – perfectly calibrated to your preferred level of spice – is already awaiting you at the table. - 4 chicken breasts, skinned and boned, cut in cubes
- 1 medium onion, finely chopped
- 4 Tbsp. butter
- 1/2 cup chopped black olives (4-1/2 oz. can), more for garnish
- 1/3 cup (canned) green chilis, chopped
- 1 small jar chopped pimentos, drained
- 1 cup fresh cilantro, minced
- 2 envelopes chicken gravy mix
- 2 cups chicken broth (canned is OK if you don’t have homemade)
- 1/2 cup whole milk
- 2 cups sour cream
- 1–1/2 tsp. salt
- 8 flour tortillas
- 2 cups Monterey Jack with Jalapeno Pepper cheese (Pepper Jack)
- 1 cup shredded mild cheddar cheese (or Mexican Blend cheese)
- Paprika
- Nature’s Seasons
- Lawry’s Chicken Spice or Weber Kickin’ Chicken
For GARNISH / to SERVE in bowls on the table for guests:
- Diced tomatoes
- Chopped lettuce
- 1/2 cup chopped black olives
- 1/2 cup fresh cilantro, diced
- Guacamole
- Salsa
Instructions
- Pre-heat oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Sauté chicken and onions in butter in a medium skillet until the chicken is cooked through and the onions are tender (about 5 minutes).
- Sprinkle generously with Nature’s Seasons seasoning and your choice of Lawry’s Chicken Spices or Weber Kickin’ Chicken seasoning for added flavor.
- Mix all ingredients in the skillet well to combine the spices evenly.
- Stir in the chopped black olives, minced fresh cilantro, and drained pimentos.
- Set the chicken mixture aside.
- In a separate medium-sized skillet, combine the chicken broth, whole milk, and chicken gravy mix.
- Heat the sauce mixture to a gentle simmer, stirring frequently to prevent sticking and ensure a smooth consistency.
- Once simmering, stir in the sour cream and salt. Continue to heat gently, making sure not to boil the sauce after adding the sour cream to prevent it from curdling.
- Keep the creamy sauce warm on the stove while you assemble the enchiladas.
- Place a generous large spoonful of the prepared chicken mixture at one end of each flour tortilla and carefully roll it up.
- Lightly butter the bottom of a large rectangular baking dish to prevent the enchiladas from sticking.
- Arrange each rolled chicken enchilada seam-side down in the prepared baking dish.
- Bake the enchiladas in the preheated 350-degree F (175 C) oven for 15 minutes.
- Remove the baking dish from the oven and evenly pour the warm cream sauce all over the top of the enchiladas.
- Sprinkle the shredded Monterey Jack (Pepper Jack) and mild cheddar cheese (or Mexican Blend cheese) generously over the top of the sauced enchiladas.
- Scatter additional chopped black olives over the cheese for extra flavor and visual appeal.
- Sprinkle 1/2 cup of diced fresh cilantro on top of the enchiladas.
- Finish with a light dusting of paprika for color.
- Return the dish to the 350-degree F (175 C) oven and bake for an additional 10 minutes, or until the enchiladas are thoroughly hot, and the cheese is beautifully melted and golden on top.
- Serve immediately. You can choose to garnish each enchilada individually before serving or place bowls of fresh garnishes on the table for guests to customize their own enchiladas.

Anticipating the artistic treasures I knew I would find, I thoughtfully packed an extra empty “expandable” suitcase. This foresight, inspired by my ever-supportive parents who know my passion for collecting authentic, local, native, and indigenous hand-made crafts from every corner of the world I visit, proved invaluable.
