A perfectly ripe avocado is key to achieving that smooth, velvety consistency.

With a spoon, scoop out the soft, green avocado flesh into a medium-sized bowl. Discard the skin and the pit. Immediately drizzle a little fresh lime juice over the scooped avocado to prevent browning.

2. Mash to Your Desired Texture: You can use a Mortar with Pestle for an authentic, rustic texture, or simply a fork.

Using your chosen tool, begin mashing the avocado. We prefer our guacamole more chunky than completely smooth, so avoid over-mashing if you like a bit of texture. Mash until it reaches your preferred consistency – some like it almost smooth, others enjoy distinct avocado pieces.

Chop the Roma tomatoes into small, even pieces. Add them directly to the bowl with the mashed avocado. For best results, you might want to remove some of the seeds and watery pulp from the tomatoes to prevent your guacamole from becoming too wet.

    • Transfer your guacamole to an airtight container.
    • Place a sheet of thin plastic wrap directly onto the surface of the guacamole, pressing down gently to remove any air pockets between the wrap and the dip. The goal is to create an airtight seal that prevents oxygen from reaching the avocado.
    • Seal the container with its lid.
    • Store in the refrigerator for up to 1-2 days. While it might still develop a slight brown layer, it will be minimal and easily scraped off, revealing fresh green guacamole underneath.
  2. The Water Barrier Method: This technique creates a physical barrier against oxygen.
    • Place your guacamole into an airtight container, smoothing the top surface.
    • Pour a thin layer (about 1/4 to 1/2 inch) of cold water or a mixture of water and a squeeze of lime juice directly over the guacamole. This layer will completely block air exposure.
