It was, in fact, the very first American cookbook I ever owned, and this particular recipe quickly became a cherished staple in my kitchen. Over the years, I’ve added a few personal touches – most notably, a generous boost of garlic – to make it even more irresistible. This dish, inspired by the late Craig Claiborne of the New York Times Cookbook, offers a perfect balance of savory garlic and earthy thyme, resulting in a pork loin that is incredibly tender, juicy, and packed with flavor. For the Pork Loin:

  • 1 4lb. pork loin

For the Garlic and Thyme Rub:

  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lemon juice (adds brightness and helps tenderize)
  • 34 cloves of garlic, minced (or more, if you love garlic!)
  • 1 tsp. dried thyme (or 1 tablespoon fresh thyme, finely chopped)
  • salt and freshly ground black pepper to taste

  1. Prepare the Pork: Begin by sprinkling the pork roast generously with your preferred seasonings. I personally love using a combination of Mrs. Dash, Nature’s Seasons, and/or Accent. If you are sensitive to MSG, simply omit the Accent; these additions are our family’s personal preference for enhancing the flavor profile beyond the original recipe.
  2. Make the Aromatic Rub: In a small bowl, combine the olive oil, fresh lemon juice, minced garlic, dried thyme, salt, and freshly ground black pepper. Mix thoroughly until well combined.
  3. Apply the Rub: Evenly rub the aromatic olive oil, garlic, and thyme mixture all over the entire 4-lb. pork loin. If there are any natural openings or crevices in the meat, try to work some of the rub into them to maximize flavor penetration.
  4. Set Up for Roasting: Place the pork loin on a flat rack within an uncovered roasting pan. Ensure the fat side of the pork loin is facing up. This allows the fat to slowly render and baste the meat as it cooks, keeping it moist and adding flavor.
  5. Roast the Pork: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Place the roasting pan in the preheated oven and roast for approximately 2 1/2 hours.
  6. Alternative Roasting Time: Alternatively, you can calculate the roasting time at roughly 45 minutes per pound of pork. This ensures a thorough cook while maintaining juiciness.
  7. Check for Doneness: The most accurate way to determine if your roast pork is perfectly cooked is by using a meat thermometer. Insert the thermometer into the thickest part of the loin, avoiding any bone. The internal temperature should read 185 degrees Fahrenheit (85 degrees Celsius) when it is done. This temperature ensures a safe and tender roast.
  8. Rest the Meat: Once the pork reaches the desired internal temperature, remove it from the oven and transfer it to a cutting board. Tent loosely with foil and let it rest for 10-15 minutes before carving. This crucial step allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.
