  • 2 tablespoons brown sugar
  • 2 large ripe peaches, halved and pitted
  • Cooking spray
  • 4 teaspoons butter (I increased this to 4 Tbsp. – one for each peach half)
  • dark chocolate, melted or shaved (I chose to melt the chocolate to drizzle it)


Instructions

  1. Preheat your oven broiler. Ensure your broiler rack is positioned for optimal browning, usually in the upper-middle section of the oven.
  2. In a small bowl, thoroughly combine the crushed Amaretti cookie crumbs with the brown sugar. Mix until the sugar is evenly distributed among the crumbs.
  3. Carefully hollow out the center of each peach half. You can use a spoon or a melon baller to remove the pit and create a small cavity for the filling.
  4. Fill each prepared peach half with approximately 1 rounded tablespoon of the Amaretti cookie crumb mixture, pressing it gently into the cavity.
  5. Arrange the stuffed peach halves in a single layer in an 11 x 7-inch glass or ceramic baking dish that has been lightly coated with cooking spray to prevent sticking.
